Lightly grease a rectangular pan and foderatelo with tin foil.
Place the spinach in a saucepan with half portion of butter and cook for a few minutes, remove from heat and mix them with the Parmesan cheese.
Fry the chopped onions in butter, Add flour and stir for a few minutes; then gradually pour the milk stirring constantly.
Cook to thicken a little.
Remove from heat and add spinach and egg yolks, season with salt and pepper and grated nutmeg.
Whip the egg whites and blend with the spinach and pour it into the mold.
Cook in the oven for 20 minutes then put the dough on to a kitchen towel, roll up and let stand to cool it.
Mix the cream cheese with cream, sprinkle with lemon juice, salt and pepper.
Unroll the roll with spinach and place over the cheese mixture.
Roll again in aluminum foil and place it in the fridge for about 12 hours.
Serve the trunk of spinach and cheese cut into thick slices.
