04672 egg FLAKES SOUP INGREDIENTS for 4 PEOPLE 4 fresh eggs, a l chicken stock, 75 g of grated Parmesan to decorate, plus salt and pepper.
Beat the eggs with the Parmesan cheese, a little salt and pepper.
Bring the broth to a boil and, when it starts to tingle, without ceasing to stir with a wooden spoon, pour the omelette: the eggs will turn into flakes and will rise to the surface.
Pour the soup into a bowl and sprinkle with the remaining Parmesan.
Ground pepper and serve hot.
