Instructions

04520 MALLOW SOUP INGREDIENTS for 4 PEOPLE 1 tablespoon dried Mallow leaves, 1/2 onion, 2 tablespoons flour, 40 g butter, 200 g of sliced bread, 1 onion, 1 carrot, 1 courgette, 1 stalk of celery, 1 potato, vegetable broth, parmesan cheese, 2 pinches of salt.

PROCEDURE Peel the carrot, Zucchini and celery.

Peel the potato and onion.

Divide in half each vegetable.

Fill a saucepan with 1 1/2 l of cold water, add the other ingredients and bring to a boil.

Add salt and cook for 40 minutes.

Put dried Mallow leaves in infusion in boiling broth lasciatevele for 5 minutes.

Strain the broth through a sieve mesh dense.

Peel and finely chop the onion.

Put the butter in a saucepan and fry the onion for 5 minutes.

Add the flour and stir with a wooden spoon for 5 minutes.

Pour a little at a time the hot broth, stirring, add salt and cook for 20 minutes.

Turn on the oven to 220°, cut the bread into 1 handles, 5 cm to the side and bake the bread for 5 minutes.

Remove the crostini from oven and keep them aside.

Put them in a bowl and pour over the cream of Mallow.

Sprinkle with the Parmesan.

If you have the opportunity to use fresh Mallow you can replace it in the dry.

Use only the leaves: lavatene 300 g remove stalks and tough strands and chop with a knife or with the Crescent.

Add to the soup with the broth, Cook as directed in the recipe, without leak them.

Serve with fresh flowers of mauve around the plate.
