Flan of mullets

01066 FLAN of MULLET with SAUCE INGREDIENTS for 4 people: 400 g of red mullet, 1 can of tomato sauce, 1 pack of cream, 3 eggs, 1 onion, oil, butter; 1 bay leaf, oregano.
Ingredients for the sauce: 75 g butter, half a glass of white wine, 2 egg yolks, half an onion, lemon juice, salt and white pepper.
In a pot put the tomato sauce, grated onion, a little oil, Laurel oregano, a pinch of salt and Cook, over low heat, for 20 minutes.
Clean the fish by removing heads and spines, chopped to obtain a very fine puree.
