01043 FISH TARTARE MOUSSE INGREDIENTS for 4 PERSONS 1 pack of frozen cod slices 400 g; pitted green olives; pickled red peppers; Capers; 1 large patèta; 25 g of butter; 250 g milk; mayonnaise in the tube; Bay leaves; peppercorns; white vinegar; Onion; Salt; Boil cod in water flavoured with half an onion, two or three Bay leaves, a few grains of pepper, half a cup of white vinegar and salt.
Separately boil the peeled and patèta setting in mashed.
Blend cod released from hides and bones and mix in the patète.
Add the butter, capers, chopped olives and part.
Sample, if necessary add a little more salt.
Place in individual cups, decorated with mayonnaise, olives and pepper fillets and keep cool until ready to serve.
