Cold mousse of herring

01487 COLD HERRING MOUSSE INGREDIENTS for 4 PEOPLE 150 g smoked herring fillets, 1 clove of garlic, 150 g cheese, 30 g onion, milk, 250 g of pepper.
After eliminating any bones from the herring fillets, place them in a bowl with milk and let them marinate for 2 hours, turning occasionally.
Put in a blender with garlic, onion and herring, previously drained and dried with a towel, and blend for 10 seconds, then add the ricotta cheese, flavored with pepper and blend for a few seconds.
Pour this mixture, which should be smooth and homogenous liquid into a mold lined with a sheet of plastic wrap and put it in the fridge for 10-12 hours.
Invert the herring mousse on the serving dish, remove the plastic wrap, decorate as desired and serve cold.
