01454 AVOCADO MOUSSE INGREDIENTS for 8-10 PEOPLE 15 g of isinglass, avocado, 3 2 tablespoons lemon juice, 2 teaspoons salt, 1/2 liter of boiling water, 1 tablespoon of cream to garnish, diced red pepper, parsley leaves.
PROCEDURE Put to soak isinglass, dissolve it in boiling water, pour it into the blender.
Blend until the mixture is smooth, then mix in the cream.
Pour into individual ramekins rinsed with cold water and let thicken in the refrigerator.
To unmold, dip the molds briefly in hot water and invert onto a plate.
At the last moment, before serving, slice the avocado and third use the slices for garnish, along with pepper and parsley.
