Mussel salad
Instructions
INGREDIENTS 1 kg PERSONS 4 and a half of mussels, 1 head of lettuce, 1 lemon, 1 stalk of celery, white wine, herbs.
For the sauce: 2 tablespoons of cream, 1 tablespoon of extra virgin olive oil, half cipollina, a pinch of Saffron.
Clean PROCESS and cook mussels steamed with herbs.
When you will open remove the shell to keep them warm.
In a saucepan, put a little oil and add the chopped chive, cream and saffron, the cooking sauce of mussels and cook for a few minutes over low heat.
Put the mussels and let them cool in the sauce.
Put on a plate of lettuce leaf, then drizzle with lemon juice and place over the mussels with sauce.
Garnish with celery cut into pieces.
