Instructions

00064 ASPARAGUS PUFF PASTRY INGREDIENTS for 4 PEOPLE 1 frozen pastry sheet, 1 bunch of asparagus, 100 g butter, half a glass of white wine, 3 egg yolks, 1 lemon, salt and pepper.

Thaw the pastry, lightly roll out the dough with a rolling pin and cut into four rectangles.

Cook in oven loud until you are inflated and golden.

Cut the hard part and place asparagus in salted water and cook for 8 minutes.

Drain and keep aside.

Place the wine in a saucepan on the stove and cook to reduce the liquid by half.

Add a tablespoon of water, egg yolks and a bit of butter.

Cook, in a double boiler, stirring constantly, gradually adding the butter to get a creamy sauce.

Season with salt and pepper and put a drop of lemon.

Place the asparagus on top of pastry rectangles and cover with the sauce.
