Crostini with chicken mousse with olives

00334 CROSTINI with CHICKEN MOUSSE with OLIVES INGREDIENTS for 4 PEOPLE 300 g chicken meat, 20 g butter, 1 clove of garlic, 1 sprig of Rosemary, Sage leaves, 1/2 dl of dry white wine, 1 dl cream, 50 g of stuffed green olives, salt and pepper.
Heat the butter over high heat in a pan and browned the meat well diced chicken.
When they are golden, add the chopped garlic, herbs, salt and tinged with wine.
Lower the heat and simmer for 10 minutes, stirring occasionally, until the contents of the Pan is dry.
Discard the garlic and spices and blend the flesh.
Pass through a sieve in order to obtain a very fine puree.
Store in refrigerator, covered, for 1 hour.
Next, add the cream gradually until you get the right creamy consistency and season with salt and pepper.
For latest olives chopped and drained.
Store in the refrigerator until serving.
Serve the mousse in small bowls with toasted bread croutons.
