Instructions

00461 LOBSTER IN BELLAVISTA INGREDIENTS for 4 PEOPLE 1 kg (2 from lobsters to 550 g), 30 g onion, 50 g carrots, 50 g of celery, 4 eggs, 150 g of mayonnaise, 6 cherry tomatoes, 20 g 10 g ketchup, Worcestershire sauce, 1 lemon, 1 sachet of gelatine, lettuce, 850 g of water, salt and pepper.

Bring to a boil 600 g of water with two cherry tomatoes, celery, carrot, onion and salt; the two lobsters and cook for 30 minutes.

When lobsters have cooled, Peel and cut the flesh into rings.

Place over heat a saucepan with 250 g of water, bring to a boil and mix in a packet of gelatin; Cook for 5 minutes, add the lemon juice.

Cut the eggs into two parts and separate the yolks from the whites.

Put in a bowl mayonnaise, Worcestershire sauce and ketchup; Add the yolks of hard-boiled eggs crushed and mix well.

Pour this mixture into a pocket for cakes and squeeze on tomatoes, previously washed, cut in half and salty, and placed inside of the media firm egg whites.

Place the lobster washers on lettuce and sprinkle around the eggs and tomatoes.

Polished with gelatine the washers and the lobster head and, before serving, garnish with parsley leaves.
