Stuffed olives ascoli
Instructions
The STUFFED OLIVES ASCOLANA 00315 INGREDIENTS for 4 PEOPLE 50 g green olives grosse (land type), 1 egg, 100 g of flour, breadcrumbs, oil for frying.
For the filling: 1/2 onion, a bit of celery, 1/2 carrot, 40 g of extra virgin olive oil, 100 g of lean Minced pork, 50 g of minced beef meat, 50 g of ground chicken breast, 50 ml white wine, 25 g butter, 2 eggs, 40 g of grated Parmesan and a sprig of parsleya pinch of nutmeg, 1/2 grated lemon rind, salt and pepper.
Put in a saucepan, celery, carrot, onion and olive oil, add the meat and cook for about 10 minutes.
Add the white wine, butter, parsley, salt and pepper and cook for 15 minutes.
After cooking add the eggs, cheese, nutmeg and lemon peel, stir constantly until mixture is firm and well linked.
Pitted olives with the appropriate equipment, stuffing with farcitele, flour them, put them in beaten egg, then in bread crumbs.
FRY in abundant olive oil and when they are golden brown, drain on paper towels.
These olives are delicious hot or cold.
Are served with appetizers or with fried Ascoli.
