Instructions
Beat the egg yolks for a few minutes.
In a saucepan put sugar, cinnamon, lemon rind and water.
Cook, stirring until the sugar has dissolved and will begin to thicken.
Remove the cinnamon and lemon rind and add almonds and continue to Cook, stirring, until the mixture is very thick.
Add the egg yolks slowly stirring constantly.
Remove from heat before bollisca and keep in the fridge before serving.
Ingredients and dosing for 4 persons
- 350 g of sugar
- 9 egg yolks
- 350 g of minced roasted almonds
- 1 stick of cinnamon
- == 1 lemon (zest)
- 3/4 cup of water
