White wine cream
Instructions
Beat the 3 egg yolks with sugar, when values, add potato starch flour, then wine, then water and lemon rind.
Very soft focus, Cook the custard, rimestandola with a whisk.
Remove from heat before the boil 1 minute and rimestarla again, then place the Pan in a water bath in cold water and always stirring, allow to cool the cream.
Whip the whites until foamy, and very firm to incorporate cream.

- 3 eggs
- 3 tablespoons of sugar
- 2 Tablespoons potato starch =
- 1 1/2 cup of alsatian white wine
- 1/2 cup of water
- Little of zest of lemon
