Whimsical omelette
Instructions
Peel the potatoes, wash them, cut them into cubes, then FRY them.
Meanwhile, FRY in 2 tablespoons of olive oil onion sliced, dried will join the courgette slices, pepper checked and let Cook.
After a few minutes add the tomatoes peeled and shredded leaves, Basil and parsley.
Add salt, pepper, nutmeg scented and cook for 15-20 minutes.
Then add fried potatoes and leave on the fire 5/10 more minutes.
Beat the eggs with the Parmesan then pour into the Pan and cook the omelet on both sides.

- 500 g of potatoes
- 40 g of grated parmesan cheese
- 6 eggs
- 2 ripe tomatoes
- 1 small zucchini
- 1 pepper
- 1 onion
- Basil
- Parsley
- Nutmeg
