Whimsical peppers
Instructions
Wash the peppers, cut them in half by dividing the petiole.
Remove seeds and pith.
Arrange the peppers with the concave part facing upward in an oven dish brushed with oil.
Place in a preheated oven at 200 degrees and cook for 15-20 minutes.
Meanwhile wash and de-boned anchovies, then knead in a bowl with a little olive oil to reduce them to a cream.
Add two cloves of garlic, a bunch of parsley and finely chopped stoned olives all over, some chopped basil leaves.
Cut the tomatoes into cubes, mix, pour a little olive oil, salt and pepper in moderation.
Withdrawn the peppers from the oven, the cannoli with tomato mixture over each put the sliced mozzarella cheese and a spoonful of anchovy sauce.
Place back in oven for 10 minutes.

- 4 sweet yellow peppers
- 250 g of mozzarella
- 250 g of tomatoes
- 100 g of green olives
- 6 salted anchovies
- 2 cloves of garlic
- 1 sprig of parsley
- Some leaves of basil
- Olive oil
- Salt
- Pepper
