Instructions
Bring the broth to a boil and and bake for 1/2 hour the clean celeriac and cut into pieces.
Puree the mixture, put the salmon in a saucepan and barely bubbles pour rice flour.
Add salt and pepper.
Cook five minutes.
Remove from heat, add a knob of butter and the egg yolk mix quickly.
Serve with grated cheese.

- 1 celeriac
- 60 g of rice cream
- 120 cl of broth
- 1 egg yolk
- 40 g of grated cheese
- 1 walnut butter
- Salt
- White pepper
