Wild garlic soup
Instructions
Saute the onions in butter and the chopped leek, sprinkle them with flour, pour over the liquid and cook over low heat for about 5 minutes.
Add wild garlic cut into strips and let it sit for another 5 minutes, then tied the soup with the egg yolk and the whipped cream and seasoned with lemon juice, salt and nutmeg.
Hopefully you can also serve on toasted white bread cut into cubes.
Ingredients and dosing for 4 persons
- 50 g of leeks
- 50 g of onions
- 100 g of wild garlic
- 50 g of butter
- 40 g of flour
- 100 cl of bone broth (or fund)
- Salt
- Nutmeg
- Pepper
- 1 egg yolk
- 10 cl of whipped
- 1 teaspoon of lemon juice
