Watercress puree
Instructions
Bring to the boil a pan of salted water.
Remove large stems of watercress and any yellow leaves, wash, immerse it in boiling water and let him for three minutes.
Do sweat, cool under running water, heat it again.
Squeeze it between your hands to remove all water.
Puree the watercress with lemon and cream until the preparation becomes smooth and creamy; Beware to not blend too.
Sift the mashed and reach into or in a saucepan.
Add salt and pepper liberally.
Heat sweet heat and serve immediately.
Watercress, like common, loses color quickly.
Don't Cook too long and don't wait too long before serving.
Use this Green puree as salsa to garnish the fish or other vegetables.
