Instructions
In a large bowl mix the egg yolks with the sugar until they become foamy and white.
Add, little by little, the all-purpose flour and potato flour mixed and sifted, the melted butter in a double boiler, a pinch of salt and the grated lemon rind.
Gently stir the mixture the egg whites and mix soda.
Pour the mixture into a baking sheet or in a buttered and lightly floured.
Bake in preheated oven at 180 degrees and cook for 30-35 minutes.
This cake can be powdered and filled with jam or cream flavor and color, for example: zabaglione and chocolate, cherry jam and custard.
