Instructions
Put the roast in a pan with oil and let Brown on all sides over high heat; Salt slightly, pepatelo and continue cooking over low heat with the addition of meat broth.
Meanwhile, squeeze the oranges and cut the rind of one of the two, only the yellow part, in thin strips.
When the roast is almost cooked, add the orange juice and the zest to fillets and then narrow down the cooking.
Serve sliced covered by its sauce and garnished with a pinch of zest to fillets.
Excellent served with peas.

- 1 glass of meat broth
- 2 oranges
