Instructions
Clean and wash the castrato, cutting large dabs, boned and stuffed with a clove, a bit of garlic and a pinch of salt and pepper, then tie them with kitchen Twine.
Put the meat in a pan with oil and garlic, Cook over a moderate flame.
After a few minutes sprinkle with red wine.
When the wine has evaporated, pour into casserole the tomatoes cut into pieces.
Simmer until just cooked.
Ingredients and dosing for 4 persons
- 1000 g of castrated lamb
- 3 rather large ripe tomatoes
- 1 handful of cloves
- 5 cloves of garlic
- 1 glass red wine
- Olive oil
- 1 pinch of salt
- 1 pinch of pepper
