Garganelli with broad beans, peas and artichokes
Instructions
Finely slice the onion and Brown in a pan with oil.
Add the Fava Beans, artichokes, peas and prosciutto, cut into strips.
Wet with white wine, add the chopped parsley, a pinch of salt and pepper.
Cook over low heat for 20 minutes.
Cook the garganelli pasta in boiling salted water until al dente, drain and add them to the ham and vegetables.
Add the grated Parmesan cheese, stir for a minute, stirring vigorously and serve.
