Instructions
In a pot roast oval heat butter, oil, Rosemary and insaporitevi the arista for 5-10 minutes.
When is well clean about sprinkle the wine and let evaporate.
Add salt and pepper and place in a preheated oven at 170 degrees.
Turn the meat occasionally, wetting it with a few tablespoons of warm milk.
Expect an hour of cooking.
Remove from oven, let stand 10 minutes, cut the roast into slices and serve with a side dish of beans boiled with Tuscan olive oil extra-virgin, salt and freshly ground black pepper.
Accompanying wines: Valpolicella Superiore DOC, DOCG Chianti, Montepulciano d'Abruzzo DOC.

- 1 sprig of rosemary
- 30 g of butter
- 3 tablespoons of olive oil extra virgin
- 1 glass dry white wine
