Marinated herring
Instructions
Skin and fillet the herrings.
Put to cook in wine and vinegar and carrots finely sliced onions, crushed garlic cloves, bay leaf, fennel seeds and peppercorns.
Cook over moderate heat until everything is thoroughly cooked and pour this hot marinade over fillet of herring that you placed in a baking dish.
Cover with wet straw and paper with the lid and cook for a quarter of an hour.
Let cool, place the herring fillets into a bowl, cover them with the marinade, pour in the oil and let it sit in cool place for a few days.
Ingredients and dosing for 4 persons
- 4 salted herring
- 10 cl of olive oil extra virgin
- 25 cl of dry white wine
- 25 cl of wine vinegar
- 3 carrots
- 2 large onions
- 2 cloves of garlic
- Fennel seeds
- 1 leaf of laurel
- Black pepper in grains
