Whitebait omelette
Instructions
Wash the whitebait.
In a bowl beat the eggs with a pinch of salt and pepper, add the whitebait and grated Parmesan.
Leave In a pan melt a knob of butter and when it is slightly Golden pour in the egg mixture.
Cook the omelet on both sides and, in turn, use a plate.
You can serve it hot or cold.

- 150 g of bianchetti
- 6 eggs
- 1 tablespoon of grated parmesan cheese
- 1 walnut butter
- Salt
- Pepper
