Pizzelle with ricotta and saffron with berries
Instructions
For pizzelle, pour in a bowl the eggs, oil, sugar, yeast, Vanillin, grated lemon peel, and finally the flour.
Mix well until you get a homogeneous mixture.
Pour the mixture with a spoon on a lightly greased hot iron and forming pizzelle.
Keep aside and prepare the filling by mixing in a bowl the ricotta with sugar, saffron and aurum.
Pour the filling into a canvas bag with tip riccia media and fill the bottom of pizzelle.
Cover with other pizzelle, place on plate, wrap the berries and a rosette of whipped cream, sprinkle with icing sugar and serve.
Ingredients and dosing for 8 persons
- 5 eggs
- 25 cl of olive oil extra virgin
- 250 g of sugar
- 1/2 teaspoon of baking powder
- 1 sachet of vanillin
- 1/2 lemon (zest)
- 500 g of type 00 flour
- For the filling:
- 500 g of very fresh ricotta
- 200 g of sugar
- 3 sachets of powdered saffron
- 15 cl of aurum
- For the garnish:
- 500 g of mixed berries
- 60 g of icing sugar
- 50 cl of whipped
