Ricotta Cake (Dolci di Ricotta)
Instructions
Squeeze the curds into a cheesecloth to remove water it contains.
Then put it in a bowl, combine 1 1 pinch of salt, sugar and sieved flour, 2 egg yolks, 2 tablespoons brandy, and mix well.
With the dough form pellets which must be passed in the remaining beaten egg and then in bread crumbs.
FRY in hot oil until they are well browned, drain and place on absorbent paper and serve.

- 300 g of ricotta
- 100 g of icing sugar
- 60 g of flour
- 4 eggs
- Breadcrumbs
- 2 tablespoons of brandy
- Olive oil
- 1 pinch of salt
