Walnut Tart (Delizia Alle Noci)
Instructions
In a Holster, mix the flour, half the sugar and a pinch of salt.
Carefully fold, manipulating in your fingertips, melted lard (not hot), 2 beaten eggs and 2 tablespoons lukewarm water in order to obtain a smooth dough.
Wrap it up at the ball and put it to rest, in a towel, in a cool place.
Mix margarine with the rest of the sugar.
The cream, add 2 egg yolks, beaten egg whites, starch and almond flour.
Flatten the dough and line the inner surface of a tray of about 24 cm in diameter.
Riddled on the bottom and remove the excess dough over the edge.
Pour in the cream of almonds just prepared.
Livellatene the surface and place in preheated oven at l90 degrees, for 25 minutes.
Just cooked, put the cake; place it in a large circular dish and allow to cool.
Prepare another working cream the butter with the icing sugar.
Carefully, one at a time, the egg yolks; aromatizzatela with coffee; mix in the chopped walnuts (retaining 12 whole quarters for decoration).
Apply this cream on the cake cold now and pass the cake in the refrigerator for about 20 minutes; then brush on the butter cream now solidified dark chocolate, melted in a Bain-Marie part.
Put the whole thing to consolidate; the surface of the cake decorated with a Crown of walnuts and put any candles during birthday parties.

- 250 g of butter
- 2 teaspoons of instant coffee
- 200 g of walnut kernels
- 250 g of plain chocolate
