Toasted olive sauce
Instructions
Rattle off the olives and put them to cook in a pan with a glass of olive oil, Sage, some leaves of Rosemary, 3 cloves of garlic, a carrot and a tablespoon of vinegar.
Allow it to cook for about an hour then merge with olives cooked the Orange and lemon, anchovies and capers and chop finely or rather everything pass into garbage disposals.
Return the mixture to the fire for a few minutes adding oil again and taste for salt.
When the mixture is the right consistency spread on toasted bread.
This sauce and Croutons is also used in other preparations and preserves very well putting it in a glass jar covered with a layer of oil.
Ingredients and dosing for 4 persons
- 500 g of black olives
- 1 orange small
- 1 small lemon
- 100 g of salted anchovies
- 50 cl of olive oil
- 1 tablespoon of wine vinegar
- Sage
- Some leaves of rosemary
- 1 carrot
- 3 cloves of garlic
- Capers
- Parsley
