Pumpkin croquettes
Instructions
Cut into slices the pumpkin and Cook, with the Peel, for 20 minutes in hot oven supported on lattice.
Chop the flesh into cubes and move the mixer still hot.
Remove the rind of the cheese, cut it into very small pieces and mix them with pumpkin: its heat will soften the cheese.
Finissimamente chopped rosemary leaves and parsley, add to the mixture along with 1 egg, 3 tablespoons of breadcrumbs, pecorino, salt and pepper.
Working with a spoon and mix.
If the dough is too soft, add more breadcrumbs.
Modeled by hand, pass the croquettes in flour, egg, beaten, and finally in breadcrumbs that there will be advanced.
Heat oil and friggetevi the croquettes in focus.
Wipe the oil with kitchen paper and serve very hot.
