Ricotta cream with blueberries
Instructions
Beat the egg yolks, milk, sugar and vanilla sugar over a pot full of hot water until it becomes hot, then put aside the mixture, add the softened gelatin and juice.
When the mixture has cooled, add the ricotta cheese, rum, lemon juice and lemon peel.
Before the mixture hardens, add whipped cream, pour it immediately into jars and let cool.
At this point, stir blueberries with honey.
When it's time to serve, pour the mixture over the cream cheese and garnished with a rosette of whipped cream.

- 2 egg yolks
- 10 cl of milk
- 80 g of sugar
- 2 leaves of gelatin
- Vanilla sugar
- 1/2 lemon
- 180 g of ricotta passed to colander
- 10 cl of cream
- 1 cl of rum
- 150 g of blueberries
- 1 tablespoon of honey
