Whitefish with gravy
Instructions
The fish, once cleaned, is put to boil in a saucepan and add the salt and some parsley leaves.
When it is well cooked you take off from water, are taken off the head and the spine and is placed on a serving dish.
Aside from doing a chopped with Rosemary (or Sage), garlic, parsley and, depending on your taste, some pine nuts, anchovies, water, green olives and capers in brine.
It all gets put to fry in a pan with olive oil, and after a few minutes, add a glass of vinegar, a little red wine, a few tablespoons of sugar.
Lets add it all for a few minutes, then with the sauce you will season the boiled fish.
