Whitefish at bolsenese
Instructions
Clean the fish and remove entrails, scales and fins; then separate the head and open it gently to remove the plug.
Wash well and place it in a baking sheet immersed in vinegar by adding water, oil, two or three cloves of whole garlic, Sage (or fennel), salt and pepper.
Put the Pan in the oven and cook until the vinegar.
When cooked place the fish on a plate and season with olive oil before serving.
