Wild boar pork
Instructions
Clean the skin of the boar and deprived of entrails.
Cospargerne the Interior with salt, pepper, garlic and fennel flower, putting at the Centre the rolled pancetta and fennel sprigs, sewing with thread.
Bake in the oven at a temperature of 200 degrees for approximately 210 minutes and when it has cooled to serve affettandola.

- 1 infant boar of to 20000 g
- 1 rolled bacon
- 600 g of climbs
- 80 g of pepper
- 200 g of fennel (flowers and sprigs)
- 25 cloves of garlic
