Octopus and shrimp salad

Cooking Octopus is the most delicate part of this simple recipe: put the Octopus in cold water in a saucepan rather capacious and bring it to a boil, then cook for 40 minutes. Then blow out the flame and leave to cool in its cooking water.
Once cool, cut the Octopus into small pieces and lay it on a plate. Do you boil shrimp aside. Put the shrimp in the pot and prepares a citronette with extra-virgin olive oil, a clove of minced garlic, chopped parsley, salt and freshly ground pepper. Vigorously to emulsify the sauce takes consistency. Pour on the Octopus and hot. Keep cool for at least half an hour then serve on the table.
