Break in a deep dish eggs and beat them lightly with the tines of a fork.
Pour the flour in a sieve and pass the rings of squid in flour, shake the colander to remove the excess flour; dip them in beaten egg and then in flour.
Heat the oil in a frying pan and FRY two or three times.
Place on a tray covered with kitchen paper.
