Instructions
First of all clean the anchovies as follows: remove the head, open it completely along the belly, core of the entrails and bone, taking care not to split the two halves.
Rinse it well and dry it gently to avoid breakage since it is very delicate.
Put the anchovies in half, in a dish.
Meanwhile, Peel and wash the parsley, become chopped together with garlic and spolverizzatelo on anchovies, adding salt and pepper to your taste.
For the marinade: Add the anchovies in oil and lemon juice, then cover the pot and allow to marinate in a cool place for about 5 hours.
You can serve this appetizer accompanied with slices of toasted bread.

- 500 g of small fresh anchovies
- 1 clove of garlic
- 2 lemons (juice)
- 1 handful of chopped parsley
- 1/2 cup of olive oil
- Salt
- Pepper
