Instructions
Carnival dish.
Make a dough with flour, whole egg and one egg yolk, sugar, white wine, yeast, lemon zest and melted butter that you on very weak flame.
You work and you get a soda and elastic dough; allow it to touch and pull a sheet of two or three millimeters thick using the special machine of noodles or the classic rolling pin (pressia).
Cut the dough into triangles, diamonds, circles and via listing using the wheel cutters and the edges of a glass.
In a saucepan bring high edges to boiling oil and soak up a few lies at a time; estraetele as soon as they reached the gilding.
Place them on paper towels to remove excess oil and then on a platter and sprinkle with powdered sugar.
There are pure lies stuffed with jam: the most suitable is to plums.
Settles a spoonful of jam on a disk of dough and cover with a second disc by pressing with your fingers the edges for welding.
The lies you serve cold.
Suggested wine: Barolo of 8-10 years.

- 500 G = = 00 Flour
- 2 eggs
- 50 g of butter
- 50 g of sugar
- 1 tablespoon of dry white wine
- 1/2 lemon (zest)
- 1/2 teaspoon of baking powder
- 50 g of icing sugar
- 100 cl of peanut oil
