WELL TOWER 00945 ' with PRAWNS INGREDIENTS for 6 PERSONS 500 g mashed potatoes, 5 dl chicken broth, 500 g 500 g carrot, peeled scampi, one shallot, bay leaf, 2 sprigs of thyme, olive oil, parsley, salt and pepper.
Clean and cut the carrots into pieces, boil, with the shallot, bay leaf and thyme in the chicken broth.
When cooked let cool.
Collect the carrots with a slotted spoon and place them on a plate.
Mash the carrots with a fork, season with a little oil, add salt and pepper and mix well.
Arrange on a baking sheet lined with aluminum foil, 6 cylindrical cutters and stuff them, first with a layer of mashed potatoes, then a layer of mashed carrots.
Put in the oven already warm in 200° for 10 minutes.
Heat oil in a pan and sauté the shrimp over high heat, add salt and pepper.
Baked patties and gently remove the cutters, arrange on a serving dish, spread over each tower some lobster and serve decorated with parsley.
