Rolled hare moscato

09678 SAUSAGE, Hare MUSCAT INGREDIENTS for 4 PEOPLE 400 g of peeled Muscat grape, a clove of garlic, shallots, 4 2 Hare thighs, 60 g butter, a bunch of herbs, 15 cl sweet white wine, a sprig of parsley and chives, salt and pepper.
Heat oven to 210° In an ovenproof dish you Brown the Hare thighs in half of the butter; Add salt and flavored with ground pepper, then retire it and keep it aside.
In their place, gently fry the garlic and minced shallots in butter left and before the sauce browned, put thighs in baking dish, herbs and cook in the oven for about 25 minutes.
When cooked remove the legs and keep them wrapped in aluminum foil.
Remove the fat from the cooking pan and deglaze the bottom with the wine.
Place the baking pan on high heat and scrape bottom and walls with a wooden spoon.
Pass the cooking to the colander and pour it into a saucepan; ground of salt, add the grains of grapes and heated for a few seconds.
Place the thighs in dishes and flavour them with the grains of grapes and sauce and decorate with parsley and chives.
