Winter salad with goat's cheese
Instructions
ingredients for 4 people
200 g mixed salad, 250 g of goat's cheese semi-mature, 8 sun-dried tomatoes, 50 g raisins, 50 g of Walnut gheriglia, 4 tablespoons olive oil, 2 tablespoons balsamic vinegar, 2 tablespoons sugar, salt.
Preparation
Cut the cheese into 8 small cylinders of about 2.5 cm. Wash the salad leaves, drain and dry them carefully with the appropriate tool. On 4 individual plates split the salad just washed. Cut dried tomatoes into small pieces and place in a saucepan full of water for 5 minutes. Drain, and place on salad strizzateli.
You soak the raisins in a bowl with hot water for about 10 minutes and then drain, squeeze it and then add it to individual plates. In a non-stick pan to the bottom often pour sugar; place over heat and, when it starts to caramelize, add the little cheese rolls: Cook 2 minutes per side.
Place 2 pieces of cheese for each dish and sprinkle with walnuts. In a bowl, emulsify the oil with the balsamic vinegar and a pinch of salt. Pour the vinaigrette in individual plates and serve.
