Good sparkling wine vinegar
Instructions
Chop the truffle and place it in the sparkling wine for a night making sure to cap the bottle.
To reduce by half the vinegar with all the spices.
Incorporate the sparkling wine, bring to a boil and remove from heat.
Let stand for 3 days then pass it all through a sieve.
Bottle and fill up with a Cap.
Ingredients and dosing for 4 persons
- 100 cl of sparkling wine
- 100 cl of white wine vinegar
- 40 g of truffles
- 5 g of thyme
- 3 g of sesame
- 5 g of tarragon
- 5 g of ginger
- 5 grains of green pepper crushed
