Put in a bowl, wide mouth, 100 g of flowers, pressing well, and cover with 100 cl white wine vinegar of good quality previously warmed.
Place the bowl in the Sun for 3 days, then filter the vinegar and use it after 2 months, to prepare delicate mayonnaises and as a topping for salads.
