Concentrated vinegar
Instructions
Boil the vinegar until it is reduced by half.
Mince shallots and garlic and put them in a vase with the sprigs of thyme, bay leaf, crushed pepper, chopped and a pinch of salt.
Pour the hot vinegar on flavourings, close and let stand a few hours.
Filtered and bottled.
Strong and aromatic used for roasts, stews, and sauces.

- 100 cl of white wine vinegar
- 2 shallots
- 1 clove of garlic
- 3 sprigs of thyme
- 1 small leaf of fresh laurel
- 1 teaspoon of peppercorns
