Vol-au-vent with Scampi
Instructions
Boil shrimp in salted water, drain and sgusciateli.
In a pan Saute sliced onion very thin in a knob of butter.
When they become transparent add a bit of curry powder and a teaspoon of flour, mixed with care.
Pour the milk little by little, then add a teaspoon of tomato sauce diluted with warm water.
Add salt and pepper and leave to thicken.
Quickly stir egg yolk and lemon juice.
Stir, add the prawns and withdrawn immediately from the fire.
Fill the vol-au-vent with the mixture.
Keep them for 5 minutes in the oven preheated to 150 degrees before serving.
