The dish is simple, but the problem is to find the beautiful large mullets, just those of September, red mullet and sea floor (stand out because camuse).
Scale and gently open eight fine mullet.
fill them well with a mixture of 150 g of stale bread crumbs, garlic, parsley, moderately spicy Chili (garlic and chilli depend, for how much, tastes), mixed with olive oil extra virgin and let rest a few hours because it tastes harmonising.
Arrange the fish in a greased baking, bake in a preheated oven for 12 minutes (more or less depending on thickness of fish).
Let cool and serve.
