Cake of tofu, carrots and zucchini
Instructions
Grate the zucchini (with a cheese grater than those used for apples) and salt them; Let them in salt for about 15 minutes.
Meanwhile, grate the carrots and sprinkle with lemon juice.
After 15 minutes, squeeze out the water from Zucchini and when done, all the other ingredients for the base.
Add to this mix the water needed to give it the right consistency and press it down on the bottom of an oiled baking tray.
Mash the tofu and mix it with the other ingredients to the above, then pour all the batter in the pan.
Bake for about 40-45 minutes at 200 degrees.
Ingredients and dosing for 4 persons
- 1 cup of grated carrot
- 2 cups of grated zucchini
- 2 tablespoons of corn oil
- 2/3 cup of wholemeal flour (flour or sifted)
- Sea salt
- Ingredients to the above:
- 1 stick of tofu
- 4 tablespoons of tahin
- 4 tablespoons of miso
- Thyme
- Basil
- 1 tablespoon of sauteed onion in oil
