Scrape the Jerusalem artichokes, wash them and cut them into wedges.
Throw them in a pot with boiling salted water and cook for about 10 minutes.
Drain and toss in a pan with the butter, add salt, cover and simmer for about 1 hour.
If necessary add a little broth.
Chop the parsley and add 5 minutes before end of cooking.
Stir and serve.
