White lamb stufatino
Instructions
Wash and dry well 1000 g lamb shoulder, cut into small pieces.
Flour lightly and bake in a tall pot in 1/2 glass of olive oil.
Add salt, pepper and cook over lively flame stirring often.
Add a glass of wine halfway through the cooking, let it fade and finish cooking with the lid, soft flame.
At the last moment add 6 cloves of minced garlic, a handful of almonds, 1/2 teaspoon of Saffron and 1/2 teaspoon cumin powder.
Mix well the flavors and serve with fried bread croutons.

- 1 glass of wine
- 1 handful of almonds
- 1/2 teaspoon of saffron
- 1/2 teaspoon of cumin powder
